Toast with Zucchini Chèvre Spread

In this heat, we’re all about quick, no cook recipes. This creamy, easy Toast with Zucchini Chèvre Spread is an instant hit.
This versatile spread will become a hot weather staple in your kitchen. In this recipe, we showcase three delicious ways to top slices of toast but you could easily use this spread in a layer of lasagna, on a flatbread or pizza, or straight out of the bowl with a spoon. Go ahead– no judgements here!

Toast with Zucchini Chèvre Spread

Ingredients:
1 large or 2 small zucchini
1 pkg chèvre
1 clove garlic
1/3 c minced herbs (any combination of basil, parsley, chives, cilantro, dill)
Lemon juice, to taste
Kosher salt
Freshly ground pepper
Your favorite bread, sliced and toasted

Instructions:
1. Grate zucchini on the large holes of a box grater and place in a colander. Sprinkle with a large pinch of kosher salt and set aside to drain.

2. Place chèvre, garlic, herbs, a squeeze of lemon juice, and ground pepper in a bowl and combine well.

3. Squeeze zucchini to remove excess water, then combine with chèvre mixture. Store in fridge until ready to use – keeps for a week.

4. To serve, spread on warm toast. Eat as is or top with additional toppings – we love sliced tomatoes, prosciutto or salami, tuna confit, smoked salmon, or lightly dressed arugula. Enjoy!
