Spicy Sauteed Corn with Peppers and Pine Nuts

1 Tbs olive oil

1 Tbs butter

1 small onion, diced

1 hot pepper, sliced

2 ears corn, kernels cut from the cob

1/2 tsp salt

1/4 c pine nuts, roughly chopped

1/4 c chopped basil

1/4 c chopped parsley

 

Heat the olive oil and butter together in a medium saute pan. Add the onion and cook until it’s soft, 1-2 minutes. Add the pepper and cook for 1 minute. Add the fresh corn to the pan and stir. After 2-3 minutes, add the salt. Continue cooking until the corn s cooed through and takes on some spice from the peppers, about 5 minutes total. Remove the pan from the heat and sprinkle with the pine nuts, basil, and parsley and serve immediately.
