• 1 pound San Marzano Tomatoes, halved
• olive oil
• salt & pepper
• balsamic vinegar
• 1 pound penne pasta
• ¼ c black olives, preferably kalamata, pitted and halved
• 1 bunch of basil, chopped
• parmesan cheese
Preheat oven to 400. Place tomatoes on baking sheet and drizzle with olive oil, salt and pepper, and roast for 20 minutes. Remove From oven, drizzle with balsamic vinegar and mash coarsely. Toss with olives and basil. Cook penne to al dente, toss with tomato sauce and top with grated parmesan.
