• 1 recipe pizza crust
• ½ c tomato sauce
• 4 cooked new potatoes
• 3 Tbs fresh rosemary leaves
• 1 tsp thyme leaves
• extra virgin olive oil
• lemon juice
• salt and freshly ground black pepper
• 6 oz fresh mozzarella, sliced mozzarella
Preheat oven to 500 degrees. Spread tomato sauce evenly over unbaked, rolled-out crust. Slice the potatoes into ¼ inch thick slices and toss in a bowl with the rosemary, thyme, olive oil, a small squeeze of lemon juice and a pinch of salt and pepper. Scatter them over the crust and top with slices of mozzarella. Bake on pizza stone until crisp and golden.
