10 Minute Appetizers
As Near Year’s Eve nears, the word is hors-d’oeuvres. We’re all about fun right now–anything more than appetizers might just be too much of a commitment. As soon as the ball drops on January first, we’re all about salads and smoothies and healthy dinners every night of the week, but for the moment, we have our sights set on snacks and small, scrumptious bites, platters of food that can be eaten with our fingers, sparkly drinks and quickly-assembled, show-stopping appetizers. Crunchy, olive-oil drizzled crostini can be put together in minutes. Start with something creamy and add a pop of flavor: smoky salmon, peppery radishes, bright and tart citrus. You’ll have plenty of energy left for dancing the night away!
Crostini with Hot Smoked Salmon and Chives
Servings: 4
Total Time:5 minutes
- 1 baguette, sliced on the bias, drizzled with olive oil and toasted
- 7 oz. Celtic Seafare hot smoked salmon, shredded
- 1/2 c. creme fraiche, sour cream, or Greek yogurt
- 1 bunch of chives, snipped
- salt and freshly ground pepper, to taste
Instructions:
- In a medium bowl, stir together salmon and creme fraiche, sour cream, or yogurt. Season to taste with salt and pepper (you might not need any salt–definitely taste before seasoning.
- Spread on crostini and top with snipped chives.
Crostini with Chèvre and Quick Pickled Radishes
Servings: 4
Total Time:5 minutes
- 1 baguette, sliced on the bias, drizzled with olive oil and toasted
- 5 oz. Wateroak chevre
- 1 bunch radishes (watermelon radishes make the prettiest choice visually), diced
- juice of one lemon
- 4 Tbs. olive oil
- 1 green onion or shallot, slivered
- 1/4 c parsley, chopped
- salt and pepper to taste
Instructions:
- In a medium bowl, combine radishes, green onion or shallot, parsley, lemon juice and olive oil and season to taste with salt and pepper. Set aside.
- Spread crostini with chèvre and arrange on a serving platter. Top with radishes and serve.
