Morrocan Spiced Veggies

1/2 tsp paprika

1/2 tsp cinnamon

1 tsp cumin

1/2 tsp Aleppo pepper

1/2 tsp nutmeg

2 tbsp olive oil

1 small butternut squash, chopped

1 zucchini, chopped

3 small red potatoes, chopped

4 carrots, chopped

Directions:

Preheat oven to 375°F and place a metal baking sheet in the oven as it preheats.

Place all chopped veggies in a medium-sized mixing bowl. Add spices and olive oil and toss to combine.

Carefully remove the pan from the oven and spread veggies into a single layer. Be careful- sheet will be extremely hot! This will kickstart the cooking process and aid in a super-crispy crust on the veggies.

Spread on baking sheet and bake at 350 for one hour. These veggies are great as a side, atop a salad or in an omelet!
