Minty Green Garlic Yogurt Sauce
Spring is for feeling lighter on our toes, and cooking with lighter flavors, too. It’s the only small window of time in Texas where the cool breeze mingles with the sun, just before the sticky heat starts rolling in. When it comes to playing with flavors in the kitchen, we love a dish that complements the weather, and a good sauce that tones down the charred smokiness of our veggies or the richness of our lamb or beef steak. This tangy, minty, cool, and creamy yogurt sauce, in particular, is something like tzatziki, with memorable flavor. Drizzle, dip or dig in with a spoon. (There’s no wrong way to enjoy!)

Total Time: 20 minutes
Yogurt Sauce:
- 1/2 c plain yogurt
- 1/4 c finely minced mint leaves
- 1 bulb green garlic, finely minced
- salt & pepper to taste
Instruction:
❶ In a small bowl, combine yogurt, mint, and green garlic and season to taste with salt and pepper.
❷ Slice steak across the grain and serve with charred shallots and yogurt sauce.
