Ingredients
Biscuits:
- 3 cups flour
- 1 Tbs baking powder
- 1 tsp salt
- 2 Tbs sugar
- ½ cup minced smoked ham
- ⅓ cup grated sharp cheddar
- 6 tbs butter, cold
- 1 cup milk or buttermilk
Herb Butter:
- 4 Tbs butter, lightly softened at room temperature
- 2 Tbs minced herbs, like parsley, chives, and tarragon
- Salt and pepper to taste

- Preheat oven to 425F.
- Mix dry ingredients together in a large bowl.
- Add ham and cheese and toss to combine.4. Grate cold butter into dry ingredients and toss again until evenly distributed.5. Add milk all at once and stir just until mostly combined.6. Dump out shaggy dough onto floured countertop or board and roughly fold into thirds like a letter. Working quickly, flatten out dough slightly with your hands, and repeat twice more.7. Pat out into a rectangle and cut into 12 square biscuits.8. Place biscuits 1-inch apart in a buttered cast iron skillet or baking sheet. Bake until golden brown, about 18-22 minutes.
Serve warm with herb butter.
