Cherry Tomato Caprese Salad

1 pint cherry tomatoes, halved

1 bunch basil

8 oz. fresh mozzarella, cut into cubes

olive oil

salt & pepper

Combine tomatoes, mozzarella & basil.  Drizzle with olive oil and season with salt and pepper.  Sprinkle with a little red wine vinegar or lemon juice if the tomatoes aren’t juicy enough.
