Spinach & Mushroom Stir-Fry with Green Garlic, Ginger and Soy

  • 2 teaspoons toasted sesame oil
  • 2 tablespoons minced fresh ginger
  • 1 1/2 tablespoons minced green garlic
  • 8 ounces shiitake mushrooms, stems trimmed, caps sliced
  • 8 ounces white mushrooms, sliced
  • 4 ounces cremini mushrooms
  • 1 bunch spinach, stems trimmed
  • 6 spring onions, cut into thin strips
  • 1 tablespoon soy sauce
  • Heat sesame oil in wok or large skillet. Add onions, garlic and ginger and fry until fragrant. Add mushrooms and sear over high heat. When mushrooms begin to caramelize, add spinach and soy and stir-fry just until spinach wilts. Serve with hot jasmine rice.
