1 head butter lettuce, washed, dried, and torn into bite-sized pieces
1 grapefruit, or two oranges, or 4 tangerines, cut into sections, membrane and pith removed
1 chicken breast, grilled and cut into strips
1/4 c. kalamata olives, cut in half
1/4 c. diced cucumber
1/4 c. Italian parsley leaves
1/2 small red onion, cut into slivers
1 avocado, peeled and cut into chunks
1/4 c. crumbled feta + 2 Tbs
1/4 c. citrus juice (lime, lemon, or grapefruit)
1 T red wine vinegar
1 T. honey
1 c. olive oil
In blender container, combine 1/4 c feta cheese, parsley, citrus juice, red wine vinegar, honey, and olive oil. Blend until emulsified. Combine lettuce, chicken, citrus, avocado, olives, cucumber, and red onion, and toss with vinaigrette. Serve with additional crumbled feta on top.
